For me, fall is seriously all about Pumpkin Spice! BUT...I may have just found a new obsession that rivals my Pumpkin Spice. These delicious Apple Pie Cookies are to die for. My hubby, who isn't even a fan of fruit anything, likes these cookies! The best part is using apples you've gone to an orchard and picked yourself! There's something so satisfying about using fresh produce that you've acquired on your own---it makes me feel even more bad-A about myself when I do that! Haha!

I honestly have no idea what kind of apples I used. One of my best friends' parents have a couple apple trees on their farm and I took some apples home when we went to visit. These apples were perfect to use, though, and I felt like a version of the Pioneer Woman when I was making these cookies! I even made enough filling to freeze some for later---I can use that filling for more cookies or maybe I'll make a real pie with it. Either way, the filling is wonderful.
When the cookies were still warm from the oven, they were literally to die for. I loved the tartness and the sweetness of the apple pie filling and by cooking them on the stove top, the apples kept just a hint of their crispness, creating a satisfying texture with the soft, chewy cookie cup. Plus, they make your home smell amazing.
As for the cookies---here's the most important part---beat the heck out of that butter and sugar! When you think you've got it fluffy enough, beat it some more! It's a secret that my momma taught me and that I'll teach my daughter. It really does make just a bit of difference; almost giving the cookies a bit of extra airiness to them, making them a bit softer than they would normally be. Now, there is a fine line---you can beat the butter and sugar too much---so you really need to pay attention to the color. When it starts to finally turn color to just a hint of paleness; you're ready to go!
These cookies would be perfect with a scoop of homemade vanilla bean ice cream or maybe I should whip up some vanilla bean whipped cream for the top?
